All you need to make this simple marinade is a blender: great with chicken, fish, aubergine, firm tofu or whatever you want. It's super simple and makes everything super tasty - winner!
2tbsp olive oil
1tbsp light soy sauce
1tbsp dark soy sauce
1 Tbsp of thyme
2 tbsp of brown sugar
1 large or 4 small spring onions chopped
A thumb of ginger, peeled
4 garlic cloves
Juice of 1 lime
2 or 3 scotch bonnets (you can add more for more heat obvs)
Pinch of salt
The method for this one is simple! Put all your ingredients in a blender and whizz until you get a runny paste.
To use, cover your desired flavour carrier (we tested this out with smoked tofu and it was 👌👌) and leave in the fridge to marinate for 24 hours. Cook as normal and enjoy!
